Copper is the oldest metal used by man. Since 17th century, tin lined copper pan is considered the Queen of
Pans thanks to its excellent properties in cooking and aesthetics and it

Superior Heat Conductivity
Copper has remarkable thermal properties. It is the most
responsive metal to temperature changes and allows for very even heat
distribution. It's twice as
conductive as aluminum and an amazing 25 times more conductive than stainless
steel. Heat distributes very evenly across the base and sides of pan. So, what does this mean for cooking?
When you heat a copper pan,
the warmth spreads quickly and evenly across its surface. No more worrying
about hotspots where food might burn. Everything cooks at the same rate. This
even distribution ensures dishes like steaks are perfectly seared, pancakes
brown uniformly, and sauces simmer without sticking.
Tin is also great conductor
itself: it doesn't interfere with the cooking performance of copper cookware,
it is naturally low-stick and nickel-free. When applied by hand over an open

Copper pans
heat up very fast and consequently use much less energy. Copper reacts swiftly
with the changes in temperature. When the flame or switch of the stove’s
setting is changed, the pan will react in a flash! One of the primary reasons
chefs swear by copper pans is this unparalleled cooking precision. Given their
fast heat response, dishes are less likely to be over or undercooked. This precision
in temperature control is especially crucial in certain recipes, for example caramel
that needs a perfect melt, in tempering chocolate or fish that requires a quick
